Potato Chip Cookies Empty Potato Chip Cookies

These cookies will melt in your mouth! A family favorite for many many years and always requested by anyone having a party that we are going to.
Not sure what the yield is as it depends on who is making the teaspoonfuls LOL

Preheat oven to 350 F

1 lb. butter, softened to room temperature
1 c. sugar
2 tsp. vanilla
3-1/2 c. all purpose flour
2-1/2 c. crushed regular potato chips (generic works great)

Cream butter and sugar till well blended and smooth. Add vanilla. Add in flour slowly, blending on low speed, til well mixed. Then add crushed potato chips.

Drop by teaspoonful on ungreased cookie sheet. Bake at 350 for 13-15 minutes, or until the edges are golden brown. Tops will be soft but will firm up when cool.
I have also decorated the tops before baking with color sprinkles for a festive touch.
