Lemon Poppy Seed Cake
My mother in laws recipe:
CAKE:
1 package (2 layer size) regular yellow cake mix
1 small instant vanilla pudding and pie filling
4 grade A large eggs
1 cup (8 oz) beer (any brand - other 4oz used later)
1/2 cup light salad oil
1/4 cup poppy seeds
GLAZE:
1/2 cup sugar
1/2 cup beer
1/2 stick butter (1/4 cup butter)

1 - Place cake mix, dry pudding, eggs, beer, oil and poppy sieed in electric mixing bowl. Blend on low speed until all ingredients are moist. Then on medium speed for 2 minutes.
2 - Turn into well greased and floured 10" tube pan (or spray that sucker with Baker's Joy!)
3 - Bake at 350 for 50 to 55 minutes - until done - tester comes out clean
4 - Cool in pan for 15 minutes and turn out on rack
5 - Make Glaze - boil ingredients for 5 minutes.

I make the glaze while the cake is baking...
When I turn out the cake after 10 or 15 minutes, I turn it out onto a plate so I can glaze it while it's HOT.
I poke holes with a chop stick I sharpened with a pencil sharpener to make holes all over the top of the cake. You can use a bamboo skewer to do this too, I just like bigger holes. You could use a washed sharpened pencil too.
Use a pastry brush to brush the glaze over the top and sides of cake.
Everyone who's favorite is poppy seed cake tells me this is the absolute BEST they have EVER had.
And it's practically no fail too. I have never had one that didn't turn out perfectly!
